We've been on the hunt for a great lemon bread recipe (since my hubby spends far too much $ at Starbucks trying to quell his lemon bread cravings), and I think that after trying way too many recipes and adding in some tweaks and alterations we've finally got it! This one is quick and easy enough that you could even have the kids whip it up to make a surprise treat for Dad!
1/2 cup (1 stick) butter or margarine, softened
1 cup sugar
2 eggs
3 tablespoons lemon juice
1 1/2 teaspoons grated lemon peel
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
1/2 cup milk
GLAZE:
2 tablespoons lemon juice
1/2 cup confectioners' sugar
Directions
In a mixing bowl, cream butter and sugar. Beat in eggs, lemon juice and peel, and vanilla. Combine flour, baking powder and salt; stir into creamed mixture alternately with milk. Pour into a greased loaf pan (or alternately into a muffin tin - makes 12 muffins). Bake at 350 degrees F for 45 minutes or until bread tests done (approx 20 minutes for muffins). Combine glaze ingredients. Remove bread from pan; immediately drizzle with glaze. {I like to double the glaze, poke holes in the top of the bread, add half the glaze while the bread is hot from the oven and then add the other half after it has cooled a bit}
I use my Slice Solutions loaf pan for perfectly pretty and smooth slices. They store nicely between sheets of waxed paper so that we can just grab one on the go in the mornings.

I see you got a new lid for that bad boy bakery jar. How dare he break on you!
@Hollandra...Amazon ROCKS! I emailed and told them that it had broken and asked them if they might be able to point me in the right direction of a replacement lid since I had just bought the jar w/ lid from them like 2 weeks earlier. They sent me a whole new replacement jar and lid set for free since it had happened so soon, and said they'd just call the first one damaged in shipping! LOVE them! :)
